when zucchinis fight back


People, I'm trying to like gardening. I am.

But I stink at it. I really do.

When I'm pulling weeds around 47 million watermelon plants that only produced 3 actual melons, I find myself thinking, "Is there a reason I'm spending a half an hour every day doing this when watermelons are $2.99 at Aldi?"

I haven't come up with a good reason yet.

But as a testament to the courage and fortitude of the zucchini plants, who survived regardless of my lack of weeding love, I'm now freezing gallons upon gallon bags of shredded zucchini, making zucchini boats every other day, and slicing zucchini into fries and baking them.

I was about to say that makes me like gardening, but the jury's still out.

    And yes, always buy $3 watermelon at ALDI. And $.49 carrots. Don't bother planting either.

  2. If it helps, I feel the same way about beans this year. Yesterday I picked beans (green-2 kinds, wax, and bird egg) for 6 hours. I actually spent 6 hours picking beans. And tomatoes. And cucumbers. The only zucchini big enough to pick I'm letting get big enough to use for seeds next year.

    We like to slice zucchini into rounds, brush with olive oil, sprinkle with everything seasoning (like on bagels) and some parmesan cheese and bake really high. We eat this with eggs for breakfast. Hope that helps you deal with zucchini.

  3. Try using shredded zucchini and sliced mushrooms in stuffed shells or lasagna either in place of or in addition to browned ground beef/sausage; squeeze out as much moisture as possible before adding. If you go meatless you can use up quite a lot of zucchini!
